Zagat: Vie Celebrates 10 Years With Greatest Hits Tasting

One year is an impressive milestone for any restaurant that opens in this hyper-competitive industry. Ten years is almost unheard of, which is why when Vie reached that landmark, the Western Springs restaurant decided to celebrate with a tasting menu of chef Paul Virant’s greatest hits. The five-course menu features a decade of guest and chef favorites starting with a choice of wood-grilled Indiana shrimp or fried quail. The meal continues with options such as crispy Parisienne gnocchi with local mushrooms or Yukon gold potato gnocchi with grilled fennel and concludes with blueberry financier or molten chocolate cake. The menu will be served all next week for $80 and is worth the trip out to the suburbs. Later this month, Virant will celebrate another accomplishment, the opening of his third restaurant, Vistro, in Hinsdale.
